Typically, you don't want a high equipment load in Elden Ring because you'll 'fat roll' which means that you dodge much slower, ergo you're more likely to get hit by attacks. But for some bizarre reason, fat rolling works exceptionally well against Consort Radahn, the final and arguably hardest boss in Shadow of the Erdtree.
Reddit user Mathishian29 beat Radahn in just under two minutes without getting hit all while fat rolling, having even more success than the most agile of players who keep getting caught in the unbelievably wide reach of his many, many attacks.
Ten years ago, FromSoftware completely changed the NG+ game.
As one commenter pointed out, "The fat roll animation is long enough to avoid the 'undodgeable' attack simply because the entire character is physically below the swings, even though you have no I-frames at this point." You don't need to fat roll to get physically below these attacks, however, as you can also use certain emotes. But it's definitely the less fiddly option.
